As part of Cookpad’s new Monday feature today they have made my Uncle John’s easy but delicious sweet corn soup! Made from all store cupboard ingredients this is definitely a winner especially at the moment with us not always getting to the shops! Home made soup is always 100 times better than shop bought and cheaper too!
I’ve adapted the recipe as I know John won’t mind, and a fact is John A isn’t my Uncle, which I’ve always called him, he’s my God Father! He has over 130 recipes on here now, I can’t believe how many he’s made since I suggested he join Cookpad in the first lockdown! All his recipes are about using up all the ingredients you have, no waste, delicious home cooked food!
I’m on a really tight budget so I used the controversial Spam, dry fried to top the soup! Tbh I never used to like it, but I think the recipe has much improved since the 70’s, well I think so it says pure meat on the tin. Anyhow souper 😂 speedy and delicious!

- 2 tbsp oil
- 2 x 165 grams of tinned sweetcorn
- 2 x medium potatoes grated
- 2 x medium carrots grated
- 2 onions diced or a cup of diced frozen onion
- 2 cloves garlic diced
- Ginger a knob or a squeeze of squirty ginger
- 2 litres chicken stock a few cubes
- 1 tbsp curry powder
- Salt and pepper to taste
- To Garnish (optional)
- Half a packet of Spam or ham diced and dry fried left to the side
- 1 crust of the loaf diced and dry fried
- 2 tbsp reserved sweetcorn dry fried and toasted
- 1 Tsp yogurt drizzled
Instructions to make to make Spicy Sweet Corn Soup (inspired by John A)
- Pour the oil in a large pan, gently heat. Prepare and dice the onion.
- Then throw in the pan let them cook on a medium heat, stirring well.
- Next prepare the garlic whilst the onion is softened. Then throw into the pan! Put in the ginger too!
- In a small pan heat on a medium to high heat! Open one can of sweetcorn take out a couple of teaspoons and toast the kernels. Storing occasionally.
- Now grate the carrots and potatoes.
- Throw them into the pan with the onions and garlic. Next add the sweetcorn and stir well.
- Drain off the sweetcorn onto kitchen paper!
- Now in the same pan dry fry the chopped up Spam too!
- Now add stock to the veggies! Let it simmer until soft! Usually 15 minutes! Whilst it’s simmering add the curry powder and seasoning!
- Once the spam or ham is crispy drain and set aside!
- Whilst the soup is bubbling, cut up the crust and dry fry again turning regularly, then set aside!
- Once the veggies are soft! Blitz with a hand blender!
